If you find your peach jam is too watery you can add in some pectin or chia seeds to thicken it up.

Do I have to rinse canned peaches?

If you are using canned peaches and they are packed in syrup I suggest you rinse them off. I like to use peaches that are canned in juice from concentrate and not those canned in syrup. The juice from the concentrate has less sugar than syrup. If you can only find peaches in syrup then rinse them off to remove any extra sugar.
