Super Moist and Delicious Blueberry Banana Bread Loaf Cake

Two classics come together in this super simple Blueberry Banana Bread recipe. No need to choose between blueberry or banana because I have included both. This recipe really has all the great fixins a loaf cake should have; oats, blueberries, bananas, and pecans. The other cool thing about this recipe is that it can easily be made into muffins.

Ingredients To Make Blueberry Banana Bread

  • ¾ cup frozen blueberries
  • 1 ¾ cups all-purpose flour, plus 1 tablespoon of blueberries
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup quick-cooking oats
  • ½ cup buttermilk
  • ½ cup butter, room temperature
  • 1 cup sugar
  • 2 eggs
  • 2 very ripe bananas
  • ½ cup coarsely chopped pecans

How to Make Blueberry Banana Bread Loaf Cake

  • Preheat the oven to 350 degrees.
  • Prepare a 9×5 loaf pan with parchment paper spritzed with nonstick cooking spray.
  • Mix the oats with buttermilk and allow to soak for at least 10 minutes.

  • Toss the blueberries with 1 tablespoon flour. Set aside.

  • Stir together the remaining flour, baking soda, and salt. Set aside.

  • In a large mixing bowl, beat the butter until fluffy, about 5 minutes. Add the sugar and beat until well blended. Add the eggs and bananas. Continue mixing until combined.
  • Scrape down the bowl and add the flour mixture. Mix just until evenly blended.
  • Fold in the blueberries and pecans, leaving some for the topping.

  • Bake for 55 to 60 minutes or until a toothpick inserted in the middle comes out clean.
  • Remove the loaf cake from the oven and let it cool on a wire rack for 10 minutes.

This Blueberry Banana Bread loaf will keep for a few days stored in an airtight container on the counter. It also freezes very well. I sometimes slice them into individual servings and freeze them. It makes it really easy to just grab a piece and go.

  • buy a cake tester so you don’t need to use toothpicks
  • keep a stash of ripe bananas in the freezer -make sure they have some black spots on them, the more the better as they will be sweeter
  • toast the pecans for a deeper flavor

What can I substitute for buttermilk?

If you don’t have buttermilk on hand you can use regular milk and a tablespoon of vinegar. Plain yogurt also works well as a substitute for buttermilk.

Do I have to coat the blueberries in flour?

Yes it is best to coat the blueberries in flour so they don’t sink to the bottom of the loaf pan. You want an even distribution of blueberries so make sure to toss them in flour before adding them to the batter.

Can I use fresh blueberries to make this Blueberry Banana Bread?

Fresh blueberries will work very well in this recipe. I tend to keep a bag of frozen blueberries in my freezer but if I had some fresh ones in the fridge I would definitely use them.

I recommend using quick-cooking oats otherwise the oats will not soften and they will be chewy.
