The espresso powder adds a nice coffee flavor that compliments the pumpkin really well. I am a sucker for anything coffee flavor so I enjoy this flavor combination. These mini muffins are delicious warm. I love to heat mine up in the toaster oven before serving them. They are also great with a dab of butter.

Ingredients For Mini Pumpkin Muffins

● 3 Eggs
● 1 Can pumpkin puree
● 2 Tsp pumpkin pie spice
● ¼ Tsp cinnamon
● ¼ Tsp nutmeg
● 1 Tsp vanilla extract
● 2 Tsp espresso powder
● 2 Cups flour
● ¾ Cup sugar
● 2 Tsp baking powder
● ½ Cup butter, softened

How To Make Mini Muffins

  • Preheat the oven to 350 degrees Fahrenheit.
  • Add mini muffin liners to mini muffin pan and set aside.
  • In a bowl whisk together the eggs with the pumpkin puree and vanilla. Set aside.
  • In a separate bowl whisk together the flour, sugar, pumpkin pie spice, cinnamon, nutmeg, and espresso powder. and baking powder.

  • Add the butter and with the help of a mixer, beat until mixed well.
  • Slowly pour in the pumpkin puree mixture into a well at the center of dry ingredients.

  • Keep beating for 3 more minutes or until the batter is light and fluffy.
  • Portion the batter into the individual mini muffin liners using a scoop.

  • Place in the oven and bake for 20 to 25 minutes or until done. Cool completely and enjoy!

Tips and Tricks For Making Mini Muffins

  • You can grease the muffin wells or line them with muffin liners.
  • Make sure to buy pure pumpkin puree and not pumpkin pie filling. Pumpkin pie filling has sugar and spices already added.
  • Bring the eggs and butter to room temperature before you start baking.

Variations Of Pumpkin Spice Muffins

  • Instead of baking in a muffin tray, bake in a loaf pan. The result is incredibly delicious too!
  • Make mini muffins instead of full size muffins and get twice as many.
  • Add more or less of the espresso powder. I love the coffee flavor from the 2 teaspoons but if you want a bigger coffee punch feel free to add more.
  • If you are a chocolate lover then go ahead and throw in some chocolate chips. Any kind of chocolate will work; dark, milk or white.
  • You can also add some chopped nuts or dried cranberries to the mixture.

These pumpkin spice muffins will keep well in an airtight container for a few days. You can also individually wrap them and freeze them. They will keep for a few months in the freezer. Just grab one whenever the mood hits or if you want to pack them in the kids’ lunch box.

Can I use fresh pumpkin instead of canned pumpkin?

I prefer to bake with canned pumpkin. Fresh pumpkin doesn’t have the same taste or texture as canned but if you want to give it a try go ahead. Cut and peel the pumpkin and steam it so it is soft.

Do I have to use pumpkin spice mix?

If you don’t have pumpkin spice mix on hand you can actually make your own. Here is a recipe: 1 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ⅛ teaspoon ground cloves.

Can I omit the espresso powder?

If you are not a coffee lover then by all means you can omit the espresso powder. If you are concerned about adding caffeine you can always use decaf espresso.

Can I add a glaze to these muffins?

Yes, you can add a glaze to these muffins if you like. Just a mixture of powdered sugar and a touch of milk mixed together will work well.

What kind of sugar should I use in these muffins?

I used granulated white sugar to make these muffins but you can use brown sugar or a combination of white and brown.

Do I have to mix the espresso with water before adding to the batter?

No, you do not need to mix the espresso with water you just add the espresso powder to the dry ingredients.
