No Bake Cookies Recipe (with Nutella)

My 1963 built-in oven no longer works. So that’s that. It’s irreplaceble due to it’s special size. I now use a separate, much smaller convection oven in my pantry instead. These no bake cookies are the perfect solution to my tiny oven situation.  Get ready to enjoy delicious and easy no bake cookies with rich and creamy nutella. This recipe is sure to be a hit at any holiday party, or just for a quick family dessert.

Even if you have a regular size oven; you may not always want to heat up the kitchen just to make a fun treat.  These no bake cookies are the perfect solution, so I wanted to share the easy recipe with you. With the busy holiday season right around the corner, I’m always looking for short cuts to save time with cooking and baking, without sacrificing the taste.

This cookie recipe is perfect for an afternoon snack, or to pack in kids lunches or you may just want to keep them all for yourself. Did I mention there is nutella in the recipe? You can’t go wrong with nutella! 

Ingredients for No Bake Cookies WITH NUTELLA

  • 2 cups White Sugar
  • 1/4 cup Butter
  • 1/2 cup Milk
  • 2 Tablespoons Cocoa Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 3/4 cup Nutella
  • 2 1/2 cups Quick Cook Oats

Most of these ingredients you may already have in your pantry. If not, they are good staple ingredients to stock up on for the holiday baking season.

Line two baking sheets with parchment paper or silicone baking mats. Set aside. 

Place sugar, butter and milk in a large saucepan over medium heat and bring to a boil. Boil for 2 minutes, then remove from heat.

Whisk in the cocoa powder and salt, followed by the vanilla extract and nutella. I know it doesn’t look very appealing here, but trust me they are yummy delish!

Add the oats and stir to coat. Add additional oats if you have too much chocolate coating for the amount of oats.

Use a cookie scoop or tablespoon to portion out the cookie batter onto the prepared baking sheets. Allow to set for 1 hour until chocolate is set.using scoop for cookies

This recipe makes a whopping 40 cookies. You can bag them up and save them for another day or gift them to co-workers or neighbors. They are so easy and make such a quick and easy thoughtful gift for any occasion!

Wasn’t that such a simple recipe? Place them in a sealed container to keep them fresh. Though, they never seem to last long enough to go stale!

QUESTIONS ABOUT no bake cookies with nutella

How long do no bake cookies stay fresh?

No bake cookies have a long shelf life compared to baked cookies. Once they have fully set, transfer them to an airtight container. Separate each layer with parchment paper.

They will keep at room temperature or in the fridge for up to 10-14 days.

Can you freeze no bake cookies?

Yes. You can freeze these cookies in an air tight container layered between parchment paper.

Can you substitute peanut butter for nutella?

Sure! You can even add peanut butter AND nutella to the recipe. 

Have fun with it and try different variations. If you love the hazelnut flavor, you can even add hazelnut extract instead of vanilla extract.
