Healthy Mini Apple Muffins

Can healthy and yummy be in the same recipe? Healthy mini apple muffins are so moist and delicious, you will want to refer to this recipe over and over again! They are not just for fall and can be enjoyed all year long.

There is nothing better than fresh-baked muffins with seasonal fruit. In the fall, you can go apple-picking for your favorite type of apple and use them in this healthy mini apple muffin recipe. We used gala apples. They compliment any recipe with their crisp bite and mellow sweetness.You can even get away with using less sugar because of the natural sweetness.

We also like to use granny smith apples for baking. Experiment with different types of apples until you find your favorite!

Makes 24 mini muffins
Prep time: 10 minutes
Cook time: 15 minutes
 

Ingredients for Healthy mini apple muffins

  • 2 medium apples, grated
  • 1 cup whole wheat flour
  • 1 cup oats
  • pinch of salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp flax seed (optional)
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup water

In a medium mixing bowl combine the flour, oats, salt, baking soda, cinnamon, flax, and sugar.

  1. Mix until all is well combined.
  2. Stir in the vegetable oil and water.

     3. Then fold in the grated apples.

     4. Spoon mixture into a greased mini muffin pan.

     5. Bake at 350 degrees for about 15 minutes.

Remove them from the pan and let cool.

tips for baking healthy muffins

  1. Use fresh, seasonal fruits whenever possible. This recipe would work with blueberries, cranberries, raspberries and more.
  2. Use ingredients at room temperature.
  3. Mix dry and wet ingredients separately.
  4. Avoid over-mixing. 
  5. Scoop the mix into the pan.
  6. Choose the right pan/mold. 
  7. Don’t forget to preheat the oven and bake at proper temperature.
  8. Don’t leave them in their pan.

CAN I FREEZE healthy mini APPLE MUFFINS?

Yes! This recipe makes 24 so you can freeze half. 

  1. Be sure to let the muffins cool completely. 
  2. Transfer them to a gallon-sized ziploc freezer bag, or an air-tight container. 
  3. They will last in the freezer for up to three months.

HOW TO THAW FROZEN MUFFINS:

  1. Place them on the counter for a few hours, or thaw overnight for breakfast. 
  2.  Place them on a microwave safe plate and heat in 30 second intervals until the muffins are thawed.
