Why are they called s’ mores?

We all know what a s’ more is. We remember the gooey marshmallows, melted chocolate, and crunchy sweet graham crackers. The flavors and smells are instantly called to mind when we hear “s’ more,” but what does it mean?

Why are these delicious treats called s’ mores? Was toasted marshmallow cookie with chocolate just too long a name? 

Actually, s’ more is a contraction that stands for “some more.” After this popular American treat was introduced at summer camps in the 50s, people realized they just had to have “some more” and the name stuck.

S’ mores are definitely a childhood rite of passage for many of us. I can still remember learning how to toast the marshmallows perfectly, marveling at the milk chocolate melting on my graham cracker, and licking the sticky goodness off my fingers afterward.

Ready to make my fudgy s’ mores brownies? Here’s what you’ll need to get started:

For the Brownie Batter

  • 1 stick butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup cocoa powder

To Top the Brownies

  • 1 cup mini marshmallows
  • 1/2 teaspoon flakey sea salt
  • 2 Graham Crackers, crushed (about 1/2 cup)

Then, follow these step by step instructions:

  1. Preheat your oven to 350F. Spray an 8” square baking dish with nonstick cooking spray. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until combined— about 2 minutes on medium-high speed.mixing dry ingredients
  3. Next, add the eggs and vanilla extract and beat until the color becomes a pale yellow— about 2 more minutes on medium-high speed.mixing wet ingredients
  4. Add in the flour and cocoa powder and mix on low speed just until no large lumps remain. Make sure not to over mix!mixing brownie batter
  5. Scrape down the sides of the bowl using a silicone spatula to ensure the batter is fully combined.

  7. Bake in a pre-heated oven for 25-30 minutes, or until the center no longer jiggles when gently shaken. (Important: These are very fudgy brownies. A toothpick inserted into the center will not come out clean).

Ingredients
