Easy American Flag Poke Cake Recipe with Fresh Strawberries and Blueberries

The best part is, that you only need a few ingredients and it’s simple enough for even novice bakers. Topped with fresh strawberries and blueberries it’s the ultimate summer dessert!

Ingredients needed for American Flag Poke Cake

Heat the oven to 350°F for a shiny metal or glass pan or 325°F for a nonstick pan. Grease bottom only of 13”x9” pan.

  • White Cake Mix
  • Strawberries
  • Blueberries
  • Cool Whip
  • Sweetened Condensed Milk
  • 1/2 cup Vegetable Oil
  • 1 cup Water
  • 3 Eggs

How to Make Poke Cake with Strawberries and Blueberries

Show your patriotic side with this red, white and blue poke cake. Moist white cake is filled with a delicious sweetened condensed milk filling, then topped with cool whip and fresh blueberries and strawberries. It’s the perfect dessert to bring to a celebration with family and friends!

Step 1. Add the ingredients to a mixing bowl

In a medium-sized bowl, combine the cake mix, vegetable oil, water, and eggs.

Step 2. Blend well

Use a hand mixer or Kitchen Aid to mix well. Keep a baking spatula handy to help scrape the sides while blending.

Pour the cake mixture into a greased glass baking dish and bake as directed on the box or until a toothpick inserted in the center comes out clean. Cool completely.

Step 3. Poke holes in the cake

Use the end of a mixing spoon to “poke” holes into the cake. This is what gives this fun cake it’s name!

You want to continue to poke holes all throughout the cake so the filling mixture will be blended well into the cake.

Step 4. Add sweetened condensed milk

Now for the extra touch of sweetness…pour a can of sweetened condensed milk all over the cake.

Make sure you get it into the holes so you get the sweet flavor throughout the cake.

Step 5. Add cool whip

Use a spatula to cover the cake with cool whip. You can use a light cool whip for this recipe, but I don’t recommend it. The rich and creamy texture of the cool whip really blends well with the sweetness of the condensed milk.

Step 6. Add blueberries

To create the “stars” part of your beautiful American flag poke cake place blueberries in the upper corner.

Step 7. Cut the strawberries

Slice thin slices of strawberries and add them to the cake in four rows (leaving the upper corner empty) to represent an American flag.

You can stack your strawberry “stripes” closer together than I did to make a solid line. (I was running low on strawberries because ‘someone’ in my house ate them before I could make this cake–LOL)
