Chocolate Zucchini Cake

Healthy and desserts don’t typically don’t go together, but this chocolate zucchini cake recipe makes your favorite dessert guilt-free! Give this surprisingly delicious and healthy treat a try when you’re craving something sweet, but still want to stick to your healthy eating routine.

Cook Time: 50-60 min

Ingredients for chocolate zucchini cake

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 4 tablespoons unsweetened cocoa powder 
  • 3 large eggs, room temperature 
  • 2 cups granulated sugar
  • 1 cup oil, vegetable or canola
  • 1 Tablespoon vanilla extract
  • 2 cups fresh zucchini – grated
  • 1 cup walnuts

How to Make Zucchini Cake

  1. Preheat oven to 350 degrees and lightly spray 13×9 pan with cooking spray
  2. Whisk together all dry ingredients in a large bowl chocolate zucchini cake dry ingredients
  3. Add wet ingredients and mix until well combined but don’t overmix chocolate zucchini cake wet ingredientschocolate zucchini cake batter
  4. Pour into pan and bake for 50-60 minutes or when a toothpick inserted in the middle comes out clean
  5. Cool completely
  6. Dust with powdered sugar and serve with whipping cream if desired
