Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
Mix in the vanilla extract and green food coloring until evenly combined.
In a separate bowl, whisk together the flour, salt, and baking soda.
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Stir in optional chocolate chips and walnuts if desired.
Using your hands, shape the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are lightly golden. The centers will remain soft.
Remove from the oven and let the cookies cool for a few minutes before rolling them in powdered sugar. Next add a single red confetti heart to each one before allowing them to cool completely on a wire rack.
