Easy Mini Pumpkin Spice Muffins Recipe

Pumpkins are synonymous with fall and the holiday season. As soon as the weather turns cooler all the pumpkin spice flavored goodies come out. If you enjoy fall and holiday baking then these mini pumpkin spice muffins need to be on your list.

  • 3 Eggs
  • 1 Can pumpkin puree
  • 2 Tsp pumpkin pie spice
  • ¼ Tsp cinnamon
  • ¼ Tsp nutmeg
  • 1 Tsp vanilla extract
  • 2 Tsp espresso powder
  • 2 Cups flour
  • ¾ Cup sugar
  • 2 Tsp baking powder
  • ½ Cup butter softened

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Add mini muffin liners to mini muffin pan and set aside.
  • In a bowl whisk together the eggs with the pumpkin puree and vanilla. Set aside.
  • In a separate bowl whisk together the flour, sugar, pumpkin pie spice, cinnamon, nutmeg, and espresso powder. and baking powder.
  • Add the butter and with the help of a mixer, beat until mixed well.
  • Slowly pour in the pumpkin puree mixture into a well at the center of dry ingredients.
  • Beat for 3 minutes until well combined.
  • Portion into mini muffin liners using scoop.
  • Place in the oven and bake for 20 to 25 minutes or until done. Cool completely and enjoy!
