Combine melted butter, egg, vanilla, white sugar and brown sugar in a large mixing bowl. Blend together until everything is well combined.
Add baking soda, baking powder and cinnamon and mix.
Begin adding half of the flour and salt and blending.
Stick the dough into the freezer for 10 minutes to allow it to cool and rest.
While the dough is chilling, preheat the oven to 375.In a small mixing bowl add all of the streusel topping ingredients and stir them up. Pull the dough out of the freezer and form small balls of dough with a cookie scoop.
Drop the balls into the streusel mix and roll them around, coating the entire ball.
Place the coated balls 3” apart on a cookie sheet that has been lightly sprayed with cooking spray or lined with parchment paper.
Bake for 15 minutes.Allow to cool. While the cookies are cooling, in a small bowl combine all of the ingredients for the icing. Mix until smooth.
Drizzle this over the cookies when they are cool.
