Easy Cake Mix Christmas Sprinkle Cookies

- Cooling rack
Ingredients
- 15.25 oz box white cake mix
- 2 eggs
- ½ cup oil
- 8 drops of green food coloring
- 2.5 oz container Christmas Sprinkles
Instructions
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
- Add the cake mix, oil, eggs, and food coloring to a large bowl, and stir until a dough has formed.
- Mix well and let the dough refrigerate for 30 minutes to an hour. This helps the dough set and makes it easier to handle. For an extra festive touch, add some sprinkles to the dough.
- Use a cookie scoop to gather dough, then dip the rounded side into a bowl of sprinkles, and place sprinkles side up on a baking sheet, 2-3 inches apart.
- Bake for 8-10 minutes, until cookies are done, then allow to cool on the baking sheet for 2 minutes. Transfer to a cooling rack to cool completely.
