If you are using white chocolate chips, melt the white chocolate chips in the microwave or on the stove in a double boiler. Keep a watchful eye on it, always stirring in between. Once the chips are fully melted and smooth, put it in a piping bag or baggie with the corner cut off.
I used "ready-made" icing as an even better solution to the last-minute issue.

Place the cupcakes in the refrigerator to let the chocolate set and become firm.
