Melt white chocolate in a microwave-safe bowl for (2) 30-second increments, stirring in between. Continue to stir until melted.
Dip the oreo cookies into the white chocolate. Allow any excess white chocolate to drip off the cookies, then place the cookies on the parchment paper, making sure to give a little space between to allow for space for the chocolate to puddle.
Sprinkle tops of the melted white chocolate with crushed peppermint.
Allow the white chocolate to set. This can take up to 30 minutes to an hour depending on how humid your home is.
Notes
These cookies can keep for a couple of weeks in an airtight container, with parchment paper between each layer.This recipe is easily scalable, but you should be okay with ¼ cup crushed peppermint unless you are doing a LOT of dipped cookies.
